Make sure to use aged basmati rice for the best result. Soak the rice for at least 20 mins which puffs it up and makes the biryani very fluffy. Heat a large pot adds salt, ghee and whole spices (bay leaf, shahi jeera, cloves and cardamom). When the water comes to a boil, add drained rice.
